Put all of the sausage meat in a big mixing bowl. Beat one large egg, then add it to the sausage meat along with a pinch of salt and black pepper.
Add the finely chopped half onion to the bowl. Mix everything with your hands until it's all well combined.
Using your hands, mix in the flour a small amount at a time until the mixture is soft and pliable but no longer sticky.
Place the mixture on a board that has been floured. Evenly flatten it out. After that, you can either leave it in one big flattened piece or break it up into smaller pieces to form into individual little patties.
A frying pan should be heated to medium heat. The patties (or the large flattened piece) should be gently fried on both sides until they are cooked through and have a slight crispy exterior. Generally speaking, depending on thickness, this takes 4 to 5 minutes per side.
