Chilled Gazpacho with a Costa Blanca Twist

Ingredients

5 ripe tomatoes

1 small cucumber (peeled and chopped)

1/2 red pepper

1/2 green pepper

1/2 small red onion

1 clove garlic

2 tbsp extra virgin olive oil

1 tbsp red wine vinegar

Salt to taste

Chilled water (around 1/2 cup, adjust for thickness)

Optional: stale bread (1 slice), for a thicker, more traditional version

To Garnish:

Finely diced cucumber, red pepper, tomato

A drizzle of olive oil

Fresh basil or parsley

Croutons

Instructions

All of the vegetables should be roughly chopped before being added to a blender.

Add a small amount of chilled water, vinegar, olive oil, and a pinch of salt. Blend until smooth.

Taste and adjust seasoning. Strain through a sieve for a smoother texture.

For at least an hour, or longer—it's better cold—chill in the fridge

Serve in glasses or tiny bowls with your preferred garnishes on top
