Ingredients

225g all-purpose flour

1 tsp baking soda

1 tsp ground ginger

1/2 tsp ground cinnamon

1/4 tsp ground cloves

1/4 tsp salt

115g unsalted butter, softened

100g brown sugar

1 large egg

60 ml molasses or golden syrup

For decorating: icing and sweets

Instructions

Combine dry ingredients: In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt

Cream butter and sugar: In a large mixing bowl, combine the softened butter and brown sugar and beat until light and fluffy. Beat in the egg and golden syrup until thoroughly combined.

Mix Wet and Dry: Gradually add the dry ingredients, mixing on low speed until just combined. Do not overmix.

Chill the Dough: Divide the dough into two discs, wrap each in plastic wrap, and chill for at least an hour. This makes it easier to roll the dough out.

Roll and cut: Preheat the oven to 175 degrees Celsius. Line a baking sheet with parchment paper. On a lightly floured surface, roll out one disc of dough to about 1/4 inch in thickness. Cut out shapes with cookie cutters and place them on the baking sheet you've prepared.

Bake: Bake for 10 minutes, or until the edges are firm. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Decorate: Once the cookies have cooled completely, top them with royal icing and sweets.
