This is a simple yet elegant holiday treat. It has a dark chocolate base that is topped with a layer of white chocolate and crushed peppermint, creating a lovely and festive contrast of colours and flavours.

Ingredients

340g dark chocolate chips

350g white chocolate chips or a chopped white chocolate bar

1/2 tsp peppermint extract

1/2 cup crushed peppermint sweets or candy canes

Instructions

Prepare the Pan: Line a baking paper sheet with baking parchment.

Melt the Dark Chocolate: In a microwave-safe bowl, melt the dark chocolate chips for 30-second intervals, stirring in between, until completely smooth. Spread the melted chocolate evenly on the prepared baking sheet. Place the baking sheet in the refrigerator for about 15 minutes, or until the dark chocolate has set but is not completely solid.

Melt the White Chocolate: In a separate microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring between each, until smooth. If desired, add the peppermint extract.

Layer the Bark: Using a spatula, spread the melted chocolate evenly over the dark chocolate layer that has set.

Decorate and Chill: Immediately sprinkle the crushed peppermint sweets over the white chocolate. Gently press them into the chocolate to ensure that they stick. Return the baking sheet to the refrigerator for 1-2 hours, or until the white chocolate has fully set.

Break and Serve: Once the bark has hardened, break it into pieces to serve. Keep in an airtight container at room temperature.
