This traditional Spanish dish that doesn’t require cooking tastes like sunshine in a bowl.
All of the vegetables should be roughly chopped before being added to a blender. Add a small amount of chilled water, vinegar, olive oil, and a pinch of salt. Blend until smooth. Taste and adjust seasoning. Strain through a sieve for a smoother texture. For at least an hour, or longer—it's better cold—chill in the fridge Serve in glasses or tiny bowls with your preferred garnishes on top
