Put the chickpeas, garlic, tahini (or sesame), lemon juice, olive oil, and salt in a food processor or blender. Add cold water a little at a time until the desired consistency is achieved, then blend until smooth. Adjust the seasoning by tasting it. Want it more tangy? More lemon should be added. More creamy? More water or oil. Transfer to a bowl and top with freshly chopped parsley, paprika, or a drizzle of olive oil.
