During these hot months on the Costa Blanca, no one has a big appetite, but you can’t go wrong with these refreshing, crunchy appetisers or snacks! They are satisfying, light, and bursting with flavour. Did I also mention that they pair beautifully with a glass of wine 😉
Cut the cucumber into thick, about 1.5-cm rounds. Combine the feta, yoghurt, lemon juice, olive oil, and herbs in a small bowl and stir until the mixture is creamy and chunky. A tiny dollop of the mixture should be spooned onto each round of cucumber. For colour and taste, place a sliced olive or a cherry tomato cut in half on top. Serve right away or refrigerate for up to two hours.
