Ingredients

4 cups of chilled watermelon, cut into cubes

200g of feta cheese, crumbled or cubed

1 small red onion, thinly sliced

1 handful of fresh mint leaves, torn

Juice of one lime

1-2 extra virgin olive oils

Freshly ground black pepper, to taste

Option if you like a bit of a kick – add some chilli flakes or balsamic vinegar to garnish

Instructions

Prep the onion: Soak your sliced onion in cold water for 5-10 minutes to mellow the flavour, then drain and set aside

Build the salad: In a large bowl, add the cubed watermelon

Add toppings: Scatter over the red onion, feta cheese, and torn mint leaves

Dressing: Drizzle some fresh lime juice and olive oil, season with black pepper

Toss and serve: Gently toss everything together and serve immediately. Add a pinch of chilli flakes or a swirl of balsamic vinegar, if desired.
