A sizzling, simple seafood dish bursting with Mediterranean flavour, perfect as a tapas or a light summer meal here on the Costa Blanca.

Ingredients

300g raw peeled prawns, either fresh or defrosted

4 large garlic cloves, thinly slices

1 small dried red chilli or half tsp chilli flakes

5 tbsp extra virgin olive oil

Pinch of sea salt

Fresh chopped Parsley to garnish

Optional - a splash of dry white wine or a squeeze of lemon juice

Some crusty bread to serve

Instructions

Heat the oil in a frying pan over medium heat.

Add the sliced garlic and chilli. Sauté gently until the garlic is golden and fragrant

Toss in the prawns and season with a pinch of salt. Cook for around 2-3 minutes, turning them until pink and just cooked through.

Add an option: Add a splash of wine or lemon for an extra zing.

Serve immediately in the sizzling dish and sprinkle with fresh parsley

Don't forget the bread for dipping into that garlicky oil.
