Summer in a bowl: refreshing, nutrient-dense, and airy. That’s this salad. The grilled chicken, avocado, and homemade dressing are all perfectly complementary to the juicy sweetness of the watermelon. Perfect for refuelling after a swim or for lunch because it is high in protein and fibre.

Grilled Chicken And Watermelon Summer Salad

Ingredients

2x boneless, skinless chicken breasts

2 cups of cubed watermelon

4 cups of mixed salad green, for example, rocket and spinach

1/4 cup crumbled feta (optional)

1/4 red onion, thinly sliced

1/2 avocado, sliced up

Fresh mint or basil leaves, chopped

Olive oil spray

Salt & pepper to taste

Dressing

1 tbsp olive oil

1 tbsp balsamic vinegar or lime juice

1 tsp honey

pinch of salt

Instructions

Season & Grill the Chicken: Season chicken breasts with salt and pepper. Grill on a BBQ or griddle pan for 5-6 minutes per side or until fully cooked. Let it rest and then slice.

Make up the salad: In a large bowl or platter, layer the salad greens, watermelon, red onion, avocado, and feta. Top with sliced grilled chicken.

Make the dressing: Whisk together olive oil, balsamic or lime juice, honey, and a pinch of salt, then drizzle over the salad

Finish with fresh herbs: Sprinkle chopped mint on top for a summery touch
